Recipe from Debbie Parkin
INGREDIENTS:
1/4 cup butter
1/4 cup shortening
1/2 cup sugar
1/4 cup brown sugar
1 egg
1 TBS water
1 tsp vanilla
1 1/2 cups and 2 TBS flour
1/2 tsp baking soda
1/4 tsp salt
approximately 3 dozen chocolate mint patties (I cut them in half so you only need about a dozen and a half)
DIRECTIONS:
1. Cream butter, shortening, and sugars.
2. Stir in egg, water, and vanilla. Beat well.
3. Add flour, soda, and salt.
4. Cover and chill dough for about 1 hour.
5. Preheat oven to 400 degrees.
6. Shape cookies by enclosing each chocolate mint patty in about 1 rounded TBS of dough.
7. Place 2 inches apart on greased baking sheet. Bake 8-10 minutes. Makes about 3 dozen.
*These are one of my favorite cookies! They have been a favorite of my families as long as I can remember and we always loved making these around Christmas time.
